Lets talk Turkey

So, since Canada just had their Thanksgiving and November is just around the corner for us, I had a craving for Turkey this weekend. My mother-in-law always cooks thanksgiving dinner, so I usually make a couple throughout the year so we can have left overs.

Well, Sunday I made a 24 pound turkey and all the trimmings, mashed potatoes, stuffing, peas, sweet potatoes, huge amounts of gravy, rolls, ect.



Guess who showed up to eat the feast???? The hubby, yup, that's it.

My one son's girlfriend was home from college and he ended up spending the day with her and taking her out to dinner and the other son had a bunch of people over watching football and he couldn't get away.


So the hubby and I ate what we could and now I have those leftovers I was hoping for. A LOT of leftovers.


Yesterday I found a recipe on The Food Network by Giada for Chicken Carbonara and replace the chicken with the turkey. It was wonderful!

Anyone have any great idea's for what I can do with the rest of this bird??? Be nice, lol.

  1. Lots of laughs. No, there rarely is any left at my house. And we get a smoked one which is best by itself or on sandwiches. Good luck!

  3. I love leftover turkey, but we didn't get any as we went to the in-laws for Thanksgiving. Hoping to have some at Christmas time.

  5. I usually do make soup, but it has been unseasonably warm here. I always throw EVERYTHING in when I make the soup. The stuffing, the gravy, the carcass. It's a PIA to strain it all, but it gives it so much more wonderful flavor.

  6. Heated Turkey subs. Fresh hoagie rolls, turkey, cheese of your choice....heat till roll is just toasted. Add whatever condiments you like. Yum!

    Also, white bean turkey chili. Great for cooler weather! Try adding shredded cheese and sour cream on top. Mmmm.

  8. Oooooo, you know, Laura, I have some fresh Ciabatta rolls, I can make turkey and swiss paninnis with some left over stuffing in there too.

  9. How about turkey salad? Just as good as chicken salad. Put it on toast or use it on a hoagie roll.

  13. Thanks, Lisa! It was good. It had been in the freezer for about 6 months so I put it in a brine first. I turned out so yummy and juicy! Good stuff!

  15. I'm cooking two birds this year. One to take to the in laws and one to eat at home the next day. My hubby sure loves Thanksgiving dinner. I use a cooking bag too. No better way to cook a turkey.

    Out of the left overs I make soup, sandwiches, omelets, and Lasagna.
