I love me some pasta....

So I made oven baked chicken and everyone ended eating elsewhere which left me with 3 huge chicken breast left over. I'd planned to make sausages for supper the next night but just wasn't feeling it. Sooooo....I'm rummaging through my cupboards and found the ingredients for some yummy Ziti. I cooked the sausage and sliced it up, cut up the left over chicken breasts and added them and presto. Pure yumminess.


It was AWESOME!!!


1 Box of Ziti
1 Package of sweet or hot sausages
2 cooked chicken breasts
1 lg can petite diced tomatoes
1 tsp Oregano
S&P to taste
1 lg jar spaghetti sauce
1 cup Parmesan cheese
1 package mozzarella cheese

Cook Ziti till almost al dente.
Saute sausages, remove from pan after cooked through and slice. De-glaze pan that the sausages were cooked in with the lg can of diced tomatoes, add oregano, salt and pepper to taste and let simmer.
Combine in deep 9x13 casserole, the chicken, sausage, diced tomatoes and Parmesan cheese. Mix together, cover the top with Mozzarella and bake at 400 until cheese is brown and bubbly. approx. 25-30 mins.

Lets talk Turkey

So, since Canada just had their Thanksgiving and November is just around the corner for us, I had a craving for Turkey this weekend. My mother-in-law always cooks thanksgiving dinner, so I usually make a couple throughout the year so we can have left overs.

Well, Sunday I made a 24 pound turkey and all the trimmings, mashed potatoes, stuffing, peas, sweet potatoes, huge amounts of gravy, rolls, ect.



Guess who showed up to eat the feast???? The hubby, yup, that's it.

My one son's girlfriend was home from college and he ended up spending the day with her and taking her out to dinner and the other son had a bunch of people over watching football and he couldn't get away.


So the hubby and I ate what we could and now I have those leftovers I was hoping for. A LOT of leftovers.


Yesterday I found a recipe on The Food Network by Giada for Chicken Carbonara and replace the chicken with the turkey. It was wonderful!
